Vegan Moringa Curry|drumstick Curry

Vegan Moringa curry with spices and coconut is a feast to anyone who loves moringa and spicy food. It is simple curry with spices and coconut.

 

 

Ingredients

1 -2 chopped Moringa (सहजन की फली)

1 Cup grated coconut (किसा हुआ नारियल)

Lemon size ball of Tamrind (इमली)

4-5 Black Pepper(काली मिर्च)

7-8 Dry Red chillies (सूखी लाल मिर्च)

1/2 tsp Turmeric (हल्दी)

1/2 tsp mustard seeds (राई)

Pinch of Asafoetida (हींग)

Salt (नमक स्वादअनुसार)

1/2 tsp Jaggery (गुड़)

1 tsp oil

Method:

In a blender add one cup grated coconut,tamarind or lemon juice, 4-5 black pepper,7-8 dry red chillies and 1/2 tsp turmeric.

Add enough water to blend to make a smooth paste

meanwhile heat a pan add 1 tsp oil

Add 1/2 tsp mustard seeds when the oil is warm enough.

Add a pinch of asafoetida

Then add chopped moringa to it and saute for about 2 minutes and add little salt

You can add little jaggery if you want

Then add water to it and cook it on medium heat for about 10 – 12 minutes.

once the moringa is perfectly cooked add the spice mix to it and stir

Add enough water to adjust the consistancy and salt as per taste

once it is boiled your moringa curry is ready to serve.

you can serve it with roti, bread or rice.
