Peanut sesame chutney can be served with roti, dosa, idli or rice and curds. The spiciness can be adjusted as per your taste. Perfect to carry when you are travelling as this lasts for 2-3 weeks.
1 cup peanuts
½ cup sesame seeds
1 tbsp Red chilli powder
1 tbsp cumin seeds
5-6 garlic cloves
Small lemon size tamarind
Salt to taste
Roast peanuts on medium flame for 6-7 minutes.
After 6-7 minutes peanuts will release aroma and color will change.
Cool down peanuts and pell off the skin when peanuts are slightly warm.
Add 1/2 cup sesame seeds and roast on LOW Flame 2-3 minutes.
Put off the gas stove and Add red chilli powder.
Keep stirring otheriwse red chilli powder will burn.
Remove from the pn and allow it to cool down.
Roast cumin seeds for 2-3 minutes and allow to cool.
Once all the roasted ingredients are cooled down.
Add all the ongredients to the blender along with garlic, tamrind, salt and grind coarsly.
Store this chutney powder in an airtight container.
This can be served with dosa, roti or rice and curd.
Note: Make sure sesame seeds do not get burn off. Roast it on a low flame and keep stirring to avoid buring.
If sesame seeds are roasted too much then they will become bitter.
Add red chilli powder only after putting off the gas stove. Warm pan is enough heat for red chilli powder to get lightly roasted.
