Cucumber Peanut Salad Loose Weight

Salad with vitamin C, fiber, proteins and low calories.  Cucumber peanut salad with tamarind. Tamarind helps to lower blood sugar, good for fatty liver. Tamarind has its own health benefits so I always use tamarind in my cooking. Easy to make salad can be made last minute.

Cucumber Peanut Salad

Ingredients

  • 2 tbsp Tamarind juice
  • 1 tsp Cumin Powder
  • 1 tbsp Jaggery
  • Salt
  • 3 Cucumbers Chopped
  • 3 tbsp Crushed Peanuts
  • 1 tbsp Roasted sesame seeds
  • Green chilli Chopped

Method

  • Mix together tamarind pulp, cumin seed powder and Jaggery.
  • Add Cubed cucumbers, peanuts, sesame seeds and mix well.
  • Add salt and green chillis or black pepper.

Notes

You can replace tamarind pulp with lemon juice.
Soak tamarind in warm water for 30 minutes and blend for thick pulp. 
Taste cucumbers before using them as they can be bitter sometimes. 
You can peel off the skin if not using organic cucumbers.
